
Inside the former Frisch’s Big Boy restaurant — which has sat vacant for a year and a half — a transformation is taking place. The new Pepper’s Mexican Grill is expected to open around mid-September.
WinCity Voices spoke with representatives of the new eatery Thursday. They are very close to being able to open the doors to the public; the only hurdle left to clear is a successful inspection by the state Department of Alcoholic Beverage Control (ABC).
“If we can get ABC in here next week, we should be open by the middle of the month,” said one representative.
The new restaurant features many new fixtures and furnishings, including traditional high-back booths. It will also boast a patio.
Pepper’s Mexican Grill is a franchise with a half-dozen locations in Kentucky, including Lexington and Nicholasville. The menu is similar to other Mexican restaurants in the area and also includes soups, salads and vegetarian options.
